Ingredients:
- 2 medium Baingan cut into cubes
- 1 big Onion finely chopped
- 2 large Potatoes cut in cubes
- 2 big Tomatoes cut into big chunks
- 1 tsp Cumin Seeds (Jeera)
- 4 tbsp Ghee or Oil
- 1 Inch Ginger finely chopped
- 2 – 3 Green Chillies chopped
- 3 – 4 Garlic Cloves Chopped
- 1 tsp Coriander Powder
- 1/4 tsp Turmeric Powder
- 1/2 tsp Red Chili Powder
- salt to taste
- 1/2 tsp Garam masala
- 3 tbsp Fresh coriander, chopped
- 1 tbsp Lemon juice
How to make aloo baingan ki sukhi sabji:
- In a kadai heat ghee. When hot, add cumin seeds. When they sputter add onion, ginger- garlic chopped and fry fry for 5 minutes or till they onion is pink and translucent.
- Then add coriander powder, garam masala, haldi powder, red chilli powder, green chillies and choppedtomatoes.
- Mix well and saute for 2 – 3 minutes till the tomatoes become soft.
- Now add diced potatoes and salt. Cook till the potatoes are half done.
- Then add cubed baingan, cover and cook till done. Stir occasionally to prevent burning.
- When done sprinkle chopped green coriander and a dash of lemon juice.
